So my sister made this Eggplant Parmesan over Thanksgiving holidays and it was simply scrumptious. The best part is its guilt free! Eggplants are baked not fried :)
I have made it a few times since….perfect for entertaining because it can be prepared in advance and baked at dinner time. Guests are very impressed with the presentation and its super easy to serve each stack!

Oh, reading about everyone’s kitchen adventures reminded me of when our trusty fridge just quit right before a big holiday dinner — total nightmare. Not only did it stretch the life of our old machine, it felt way better knowing we didn’t just toss something that still had life left in it.
